Easy campfire gingerbread

What you need:

  • 1/2 onion, chopped

  • 6 eggs, beaten

  • 4 cups potatoes, peeled and cubed

  • 1 cup sliced ​​bacon

  • 1 cup grated Cheddar cheese

In a cast iron skillet over slow-burning campfire coals, cook bacon to desired doneness. Remove from pan and set aside. Add the onion and potatoes to the pan and cook them in the hot bacon fat for 10-12 minutes or until the potatoes are tender.

Return the bacon to the pan and add the eggs. Cover and cook for 2-3 minutes, until eggs are set. Sprinkle with cheese and let melt before slicing and serving.

Tasty breakfast burritos

What you need:

  • 12 eggs

  • 1 small can of green chili peppers

  • 2 cups shredded Cheddar cheese

  • 1 cup frozen hash browns

  • 1 cup cooked ham, diced

  • 1/4 cup chopped coriander

  • 1 tablespoon taco seasoning

  • 1/2 tablespoon olive oil

  • 8 pieces 12-inch flour tortillas

Heat the olive oil in a large saucepan and cook the ham and ham, stirring occasionally, for 8-10 minutes, or until cooked through. While you wait for it to boil, beat the eggs in a large bowl. Whisk in the taco seasoning. Add the eggs to the cooked hash brown and ham and cook until set. Stir in chiles, cheddar cheese and coriander.
